Menu Plan Monday

I've been struggling with meal planning since determining that I cannot consume any dairy if I want the nurseling to not be screaming in pain every time he blows out the back end of his diaper like it's one of the 16-inch guns on the deck of the USS North Carolina.  I cheat and still use a tiny bit of butter for toast so he still has minor issues, but they're not overtly bothersome to him.  Anything that calls for more than a couple tablespoons of butter IS an issue though.

So, all I've figured out for this week (which is more than I've figured out since my last posted menu) is:

Lunches or Dinners:
Breakfasts:
  • Breakfast Burrito (without cheese)
  • Barley Mush
  • my usual eggs and bacon with toast
I've picked up some rice milk (*gag*) to see if it is viable in baked goods so maybe I can do biscuits or pancakes...not sure if I can use it with lemon juice to make sour milk for cornbread....  Otherwise I'm existing on crackers, tuna, generic marshmallows, tortilla chips, and Coca-Cola because it's what is easy to grab.  Then there's also sloppy joes and spaghetti.  I'm feeling very sorry for myself and still rather overwhelmed--the CAN'Ts are overshadowing the CANs too greatly so it seems like a greater obstacle than it actually is.  It would be easier if I was back to scratch-made, but I'm not.

Proof That I Accomplished Something...Partially





The picture is from this morning, but it's been cleared for quite sometime.  The briefcase is out because of my current Cub Scout project.  The newspapers box has not been upgraded yet (and has a box of quilt that I need to post to fb).  The duplo block is the baby's, there are a few scattered around the floor from the boys playing with him on a blanket on the floor.  I did not put my shoes away last night.  The backpack is a pre-packaged 72hr kit we received as a Christmas present in 2001 that needs to be rebooted--it was brought in from the Jeep after Cuboree.

Even the mantle is still mostly cleared!  But don't ask to look at the glider that needs to be scrapped, or the crap counter in the kitchen....  Maybe tomorrow...

It's been about a month since I last menu planned.  In fact, that menu is still on the fridge...


I'm trying to find dishes that I can eat within the parameters of my food reactions and the baby's food reactions now that we have definitively identified milk as an issue.

But before I get fully sucked into that, I have a spreadsheet project to finish for our Cub Scout Pack before Wednesday, and some projects to finish for our HotWheels club before Saturday.

So I don't have a menu yet, still, again...and it's Monday once more.

When Personalities Collide

Do you have the same friends as your children?


I mean are the children of your friends also friends with your children?  Or is your fun dampened by kiddos that merely tolerate each other?  Or is the fun of the children dampened by the bare toleration of the parents?

Bare toleration of parents can be worked with by doing park dates--nobody has to play host or guest.  For that matter the parents can sit on opposite ends of the park if necessary.  I suppose it could also be worked with by having group gatherings--at the park, at a home, on a field trip.

Mere toleration by the kids can be worked with by meeting for coffee sans kiddos.  Or reduce it to online interaction only.

It seems so simply when typed out--yet I've been mulling over this concept for two or three years; maybe more.  How to have a satisfying friendship with somebody when all parties aren't exactly friendly.  Another concept I've mulled over for years is how to handle lop-sided friendships--where Friend A holds time with Friend B at a higher priority than Friend B values time with Friend A.  It's simply part of life, but how do you go about it without injuring the feelings of the other friend (or allowing your own to be injured)?


Just some thoughts to ponder, with a fussy nurseling, when I have a stack of work to do for two organizations and my practice.  *lol*

Rice Crispy Treats--Dairy Free!

The idea for this hit me while doing our twice-monthly grocery shop this morning.  I've done individual microwaved servings of crispy treats for years, this is just nixing the butter.  My non-stick spray is an organic olive oil spray.

Pour some mini marshmallows into a microwave-safe bowl.
Spray with non-stick spray and toss till evenly coated.
Sprinkle with cinnamon (it masks the flavor from the spray).
Pour in some rice crispy cereal and mix well.
