We've already revised this plan though.  We forgot to pull out the roast for Sunday so Grandma made meatloaf.  We fetched some pork ribs when we were shopping Saturday, but didn't end up getting home with them until dark so we're saving them till this weekend so DH can grill them.

Grandma arrived safely and her critters survived the drive (as well as the snow and rain)!  They're staying with us until Grandma finds a house all her own.  On top of that, I haven't grocery shopped sufficiently for at least a month--one round of grocery budget was gingerbread supplies, another was never used on food because it was used on Christmas gifts; I don't recall beyond that now.  So my upright freezer is running slim, which means it's time to sort the logistics for defrosting it--it has three pork roasts, about a third of a package of meatballs, several quarts of various homemade soups, and a number of freezer jam pints; plus some lunch containers, a ham steak, and a pound of bacon.  Everything else doesn't require freezing, I just keep them in there to prolong the shelf life for me: grains, dried produce, tea, MIL's coffee....

What I have for this week's menu, thus far:

Monday:
  • cereal and fruit
  • leftovers
  • chili and cornbread (the cornbread will be a rice milk attempt)
Tuesday:
  • oatmeal
  • sandwich
  • beef stew and biscuits (sans rutabaga because i don't have any right now; the biscuits will be a rice milk attempt)

  • toad-in-a-hole (if I get bread made)
  • dippy ckn
  • crockpot pork roast

We have holiday guests arriving this week!  We're SOOO excited!  Depending on road conditions they'll hopefully be here Wednesday.  We also have an astronomy teleclass, a scouting errand, and an art class going on this week.   I'm still lost on snacks, but I actually have all of our meals planned!

I've been struggling with meal planning since determining that I cannot consume any dairy if I want the nurseling to not be screaming in pain every time he blows out the back end of his diaper like it's one of the 16-inch guns on the deck of the USS North Carolina.  I cheat and still use a tiny bit of butter for toast so he still has minor issues, but they're not overtly bothersome to him.  Anything that calls for more than a couple tablespoons of butter IS an issue though.

So, all I've figured out for this week (which is more than I've figured out since my last posted menu) is:

Lunches or Dinners:
Breakfasts:
  • Breakfast Burrito (without cheese)
  • Barley Mush
  • my usual eggs and bacon with toast
I've picked up some rice milk (*gag*) to see if it is viable in baked goods so maybe I can do biscuits or pancakes...not sure if I can use it with lemon juice to make sour milk for cornbread....  Otherwise I'm existing on crackers, tuna, generic marshmallows, tortilla chips, and Coca-Cola because it's what is easy to grab.  Then there's also sloppy joes and spaghetti.  I'm feeling very sorry for myself and still rather overwhelmed--the CAN'Ts are overshadowing the CANs too greatly so it seems like a greater obstacle than it actually is.  It would be easier if I was back to scratch-made, but I'm not.

It's been about a month since I last menu planned.  In fact, that menu is still on the fridge...


I'm trying to find dishes that I can eat within the parameters of my food reactions and the baby's food reactions now that we have definitively identified milk as an issue.

But before I get fully sucked into that, I have a spreadsheet project to finish for our Cub Scout Pack before Wednesday, and some projects to finish for our HotWheels club before Saturday.

So I don't have a menu yet, still, again...and it's Monday once more.

This menu was assembled Friday night, but the weekend changed and is mowing over the beginning of the week.  Alterations are noted.

  • Rotini (Auntie's recipe from when I was a kid--no clue where she got it from: rotini noodles, ground beef, baked beans, bbq sauce)  Ruth's Sweet & Sour with rice and veggie

Typing it out I'm realizing that I don't like the flow of some of the items.  :/

I'm working on streamlining breakfast a bit more now that I've tinkered with my over-the-top menu plan system.  Muffins on Sunday (made the night before), and the rest of the week is random mayhem of breakfast burrito, hot cereal, cold cereal, pancakes, and biscuits/bagels/scones/toast.  This week I didn't designate accompaniments--we'll figure out what strikes us that day regarding eggs, bacon, fruit, yogurt, etc.

Still working on getting us more balanced and getting  more produce in.  We're usually good on carbs...need more produce and more protein.  I'm stoked about opportunities for cooler weather though!  I love me some soup and I usually can't enjoy them in the warmer months--doesn't hit the spot in the same manner.  I've taken to freezing leftover homemade soup in quart-sized freezer jars (with the reusable plastic lids)--one jar usually covers lunch for the kids and I nicely.

Dinner--lasagna (homemade), marinated squash

Tuesday:
Breakfast--omelet, sausage
Snack--carrots
Lunch--chips&dip
Dinner--garlic-brown sugar chicken (crockpot), fake tater, broccoli mix

DH made the rice!

Wednesday:
Breakfast--biscuits, yogurt
Snack--hard-boiled egg, grapes
Lunch--pbhoney sandwich, apple
Dinner--homemade pizza, salad

Thursday:
Breakfast--pancakes, bacon
Snack--plum
Lunch--soup (haven't decided which one yet), quesadilla
Dinner--we're providing a crock of pintos, some cornbread, and a peach cobbler for a dinner our Cub Scout Pack is putting on for our charter organization

Friday:
Breakfast--breakfast burrito, apple
Snack--popcorn
Lunch--mac&chs, broccoli
Dinner--campfire food

Saturday:
Breakfast--cream of wheat, yogurt
Snack--carrots
Lunch--pbj, grapes
Dinner--ckn teryaki (using garlic-brown sugar leftovers), broccoli mix

Sunday:
Breakfast--eggs &bacon, fruit (banana or apple)
Snack--craisins, pretzels
Lunch--burritos
Dinner--crockpot pork chops, dressed sweet taters, veggies (likely brocc mix--it's one of the few that I can still eat)


Our participation in this week's activities is uncertain as we have discovered we have roseola in our household. It will depend on if all the kids get it or not. We're doing our aromatherapy and ginger.

As for last week's menu:
-the sloppy joes never happened due to a dramatically late lunch (too much excitement at a pool party).
-the toad-in-a-hole never happened because of the baby' going-ons and DH was unavailable to relieve me. We had hamburger helper and a delayed bedtime once DH came in from outside chores.
-due to delays in getting the shopping done, the fryer was not defrosted sufficiently to prep the rotisserie chicken, so it swapped with the homemade pizza that was originally scheduled for this monday. This menu shows that adjustment.

Breakfast, lunch, and snacks are planned out for this week as well. We'll see how much this helps our household.

Last week didn't end up going quite as planned. But life is what happens while you're making plans.

We unexpectedly picked pears Tuesday. They were super ripe and needed to be cleared from the trees before Irene blew them off. Ended up taking me three full days to make some pear chutney (from the Ball Blue Book). I've never had chutney and I've never made chutney before. I was told by two dear friends that it's great on sausage and with pork. I was interested because I remember reading or seeing "westernized" chutney as a side dish. Everything I'm finding at this moment expresses it as a condiment--akin to dill relish if you please. Anyway, it took three days because the entirety of the household conspired against me.
